Growing up, I was never the biggest fan of peanut butter. Sometimes I’d have peanut butter and jelly sandwiches, but it wasn’t something I was head over heels about. Over the years, it’s grown on me… and now I’m basically addicted. Especially recently. It’s at an all-time high. (I blame the Reese’s Valentines Day hearts…)
There’s a really great juice place close to my apartment. The other day, it wasn’t mobbed with Soul Cycle people (which is about 99% of the time) and I popped in for a smoothie or a juice or a something. I went with a peanut butter smoothie and absolutely loved it. Instead of going back every afternoon when I started craving it– which really was beginning to be every day– I decided to go off and make it myself. I have a blender that I bought on Rue La La and I had more or less put it away through the winter thinking it was too cold for anything… but nope. It’s out and back in action.
No winter storm can keep me from making one of these every day.
I think making any kind of blended beverage is more of an art than a science. Which is great! I typically like recipes to be exact because I don’t trust myself… but this one is really easy to change based on your preferences. Go for more or less banana or (oh!) drizzle some chocolate on top.
1 Small banana
6 cubes of ice (alter for personal texture preferences)
2 tablespoons of peanut butter
1/2 cup (ish) of frozen coconut milk
A splash of almond milk
Again, you can really do a bunch of things with this to really make it match your preferences perfectly. One day I used a bigger banana and the flavor really popped. Sometimes I skimp on the peanut butter if I want a milkier smoothie.
