OMG, I needed this post a week ago. I grilled for the first time while on Nantucket last week. I felt pretty clueless, so I kept things simple with steak and vegetable kabobs. My building has grills in the courtyard, but I’ve always been too intimidated to try it on my own. I’m feeling inspired now though.

Grilling is without a doubt the best way to cook in the summer, whether you’re using a gas barbecue or a charcoal grill, this method of cooking adds so much flavor to everything. I know there are a ton of people who grill all year, but it’s a little cold for me in Toronto, so I tend to do all of my grilling in the summer. The summer is zooming by, so I figured it’s about time we get outside and grill everything!

1. Grilled salmon skewers

People are often intimidated by grilling fish, but throwing fish on a skewer with zucchini, peppers, and onion couldn’t be easier.

2. Greek chicken souvlaki

I grew up spending my summers in Greece (my grandparents live there), so this chicken souvlaki is 100% authentic, it tastes just like the real thing! Plus the ingredients list couldn’t be more simple.

3. Grilled sweet potato wedges

Not only are these sweet potato wedges delicious, but with the grill marks they are also beautiful (and impressive!).

4. Greek grilled chicken wings

Yes, I love to cook Greek food! Have you ever grilled chicken wings before? The flavors are completely different from fried or baked wings, and it has become my favorite way to eat chicken wings.

5. Grilled eggplant skewers

Everything is better on a skewer! These are the perfect vegan option for summer grilling, the meatiness of the eggplant holds up really well on the grill.

6. Grilled zucchini salad

Zucchini is one of my favorite things to grill and with white beans and fresh basil, this salad is the ultimate healthy summer dish! I like to make this and bring it to work throughout the week.

7. Five ingredient turkey burgers

Turkey burgers don’t have the best reputation, but these burgers with just five ingredients are one of my favorites to make in the summer, I might even prefer them to beef!

8. Charred corn and farro salad

Charring corn on the barbecue gives a complex sweet and smoky flavor to this salad. I’ve paired the sweet corn with my favorite earthy grain of the moment, farro.

I totally recommend a cast iron grill pan! They are great for us city/apartment dwellers who are regulated out of grills on the balcony–that way you don’t have to worry about dragging everything up to the roof or down to the courtyard to use communal grills. Is the taste *exactly* the same? No, but it’s still an easy, healthy way to grill in your own kitchen! Get a pan with a silicone handle cover and that way you don’t even need to worry about pot holders.

I was just invited to go on a vacation with some family in the Upper Peninsula of Michigan in a few weeks, this is perfect timing! I know what I’ll be stocking my cooler with, so I can treat everyone to dinner as a thank you for bringing me along!
